This is by no means intended to be an exhaustive list, but will hopefully provide some material others may find useful. The links are arranged by topic or type of source. Some may apply more directly to one course than another, or may be relevant to multiple courses.

CIA World Factbook - A database of information on countries across the world.
Fragile States Index - A site with plenty of comparative data to assess levels of political stability around the world.
Gapminder: Dollar Street - A website that details and illustrates economic realities globally.
Marsh Political Risk Map - Visualization data for political risk and related factors.
OECD Better Life Index - A source that uses a variety of indicators to compare quality of life.
Our World In Data - A source of a range of data on a wide variety of topics. Also great if you like graphs.
PopulationPyramid.net - A great source for analyzing population profiles for countries and regions.
The Global Economy - A source of a great variety of economic data.

Internet Ancient History Sourcebook - A website with a wide range of primary source texts from the ancient world.
Internet Medieval Sourcebook - A website with a wide range of primary source texts from the Middle Ages.
Internet Modern History Sourcebook - A website with a wide range of primary texts from the modern world.

Secondary Sources

Geographical Magazine - A UK-based magazine providing a variety of geography and environment related articles.
geographypods - A site based out of Europe that focuses on a variety of geography and global issues topics that are structured as lessons.
National Geographic Education Resource Library - A site containing a variety of source information for all grade levels, including articles, photographs, infographics, maps, activities, etc.
re:politics - A source with many articles on topics related to Canadian government and politics.
Visual Capitalist - A website containing a wealth of infographics and other visualized information on a range of topics relevant to the social studies.
World History Encyclopedia - This source contains articles, media, education materials for a wide range of historical topics.
